						<list> Wash and cut radish into long thin slices (1” x 3” ) (1/2” thick).</list>

<list> Put the radish pieces into a bowl, sprinkle with salt, mix well.

<list> Cover and let the mixture sit overnight.</list>

<list> Put the mixture into a mesh bag, wrap tightly with strings. </list>

<list> Put the bag under 25 pound weight. The juice will drain out.</list>

<list> Tightening the strings every day as the bag shrinks.</list>

<list> After 3 days, it should  be ready for step #8 if the bag weighs 2.5 pounds (1/4 of original weight) or less。It not, repeat step 7 until the target weight is reached.</list>
<list> Put the radish slices into a bowl, mix in sugar. </list>
<list> Put the mixture into a jar, cover tightly, refrigerate. </list>
<list> Ready to eat after 4-6 months. The longer the better. </list>

           <list> It is important to get good quality radish. The radishes are best in winter/spring time. They tend to have a bitter taste in the summer.
           </list><list> If white mold appears during the process, remove the moldy pieces.  If black mold appears during the process, discard the whole batch and start over.
           </list><list> Store in a jar with tight seal, otherwise your refrigerator will smell like pickled radish.  I get mine from Container store.
