Oatmeal Raisin Cookies

INGREDIENTS

 

1/2 cup olive oil
1/2 cup applesauce
1/2 cup grade B maple syrup

1 tablespoon brown sugar (optional)
1 teaspoon vanilla extract
1-3/4 cups whole wheat pastry flour (variation: use half almond meal, half pastry flour)
3 cups rolled oats
1 teaspoon baking soda
1 teaspoon baking powder
1 cup raisins
3/4 cup walnut pieces

COOKING PROEDURE

 

1.          Preheat oven to 375 degrees.

2.          Cream together olive oil, applesauce, maple syrup and brown sugar in a large bowl. Add remaining ingredients and mix well.

3.          Drop a rounded tablespoon of batter at a time on a cookie sheet.

4.          Bake 15-20 minutes at 375 degrees. Cookie is ready when it¡¦s hard to the touch. Allow to cool before removing from cookie sheet.

CHEF¡¦S TIPS

 

*          Delicious desserts are usually unhealthy. This is a happy exception ¡V delicious & healthy. I¡¦d call it ¡¥energy cookie¡¦.

*          Almond meal makes the cookie moist, and is a good source of protein.

*          I use silicone baking mat to avoid oiling the cookie sheet.
