INGREDIENTS

 

1 1/2 cup water
1 TS         olive oil
3 TS         honey
1/2 teaspoon salt
1 1/4 cup  bread flour
1 1/4 cup  whole wheat flour
1 cup        whole wheat pastry flour
1/3 cup     gluten flour
1/4 cup walnut (optional)
raisin (optional)

2 1/4 teaspoon (Red Star) active dry yeast

COOKING PROEDURE

 

Use ¡¥whole wheat¡¦ cycle. Follow instructions of your bread machine. In general, liquid comes in first, dry ingredients second, yeast last.

CHEF¡¦S TIPS

 

*          Amount of liquid is important. Measure accurately.

*          Gluten flour can be omitted if your bread rise high enough and doesn¡¦t cave in. I buy organic flour from Whole Foods bulk section.

*          Olive oil can be omitted if all the bread is eaten in 1 day.

*          You can buy one pound of packaged yeast at CostCo for $3. Keep it in a dark glass container, well sealed, in refrigerator. It¡¦s 13 times cheaper than 3 packets of yeast (3/4 Oz) that cost about $2.

*          I use Breadman TR2200C Ultimate bread machine, and I can recommend this brand/model. A rise cycle longer than white bread is necessary to make whole wheat bread light and fluffy.

*          If you can¡¦t consume all the bread in 2-3 days, you can slice and freeze it first, and steam it on medium heat for 5 minutes before eating. Steaming also softens bread crust.
